In Africa, beans are consumed as a starchy staple food. However scientific reports on the nutritional potential of Phaseolus vulgaris (purple beans) are rare. In order to contribute to their wider use and valorization in Côte d’Ivoire, this plant has attracted our attention. The physicochemical and nutritive properties were investigated and the results obtained were as follow : moisture (75,19%), crude proteins (10.33%), crude fibres (27.59%), ash (5.45%), carbohydrates (38.73%), crude lipids (1.77%) and food energy (178.28 kcal/100 g). The mineral elements contents were high with remarkable amount of K (609.87 mg/100 g), Ca (237.20 mg/100 g), Mg (176.39 mg/100 g), P (145.40 mg/100 g), Na (9.90 mg/100 g), Fe (59.25 mg/100 g) and Zn (33.65 mg/100 g). The Ca/P ratio was from 1.63. These purple bean also contained appreciable levels of polyphenols (572.25 mg/100 g), flavonoids (15.33 mg/100 g) and tannins (162.02 mg/100 g). All these results suggest that the studied purple bean if consume in sufficient amount would contribute greatly to the nutritional requirement and to the food security of Ivorian population.
